Best artichoke dippp ever!!


                                     Cheesy Artichoke Dip

     If anyone knows me, they'd obviously tell you i love food!
This is by far my fave dip recipe, sure it might be a bit pricey ($20-$30) but oh is it worth it in the end :)
I guess you could call it a 3 cheese artichoke dip.. and its used not as chip dip but putting on crusty bread like calabrese, or a nice baguette. I highly do not recommend this for anyone on a diet as its probably not the most healthiest thing out there!! Also not recommended for anyone going out or for a hot date due to the garlic :P
Soooo the ingredients you need:
  • small deli container of freshly ground Parmesan cheese
  • wedge of Asiago cheese
  • mozzarella ball
  • 3-4 tablespoons mayonnaise ( do not use 1/2 fat)
  • 2 cans of artichoke hearts
  • oregano
  • vegetable oil
  • clove of garlic

  1. Shred the asiago and mozzarella cheese in a fairly big bowl, also throw in the Parmesan.
  2. Drain the artichoke hearts, try to get all the liquid out :S Cut into halves and finely chop the artichoke, add into the bowl with the cheese.
  3. finely chop about 2-3 cloves of garlic, then add into the cheese bowl as well. Add in about 3-4 tablespoons of mayo. Stir it all up, You wanna see it evenly coated... kinda like the consistency of tuna when you put mayo in it lol.
  4. You will need a deep baking tray, i use one of those glass baking trays. You don't want a long baking tray either... since you don't want it to be crispy, you just want it all to melt together. Once you found the appropriate tray, take  a small amount of vegetable oil and grease all the sides and bottom. Set the oven for 400.
  5. Using a spatula scoop it into the baking tray, pat down evenly. Sprinkle some oregano on top and throw into the oven.
  6. Let it melt away for 15-20 mins, until top starts browning a little. Slice up bread into serveable bitesizes and voila artichoke dip, best eaten while its hot and cheese is all melted.
